At Sapaio, grappa is born from a meeting of minds.

The very first Sapaio Grappa – a combination of quality and precision that pays tribute to our 2016 harvest.

In 2016, Sapaio took an important step by expanding into distillate production, something that had not been considered until recently. The grappa production process is in fact very complex, and technique and precision are the keys to a quality product. According to Sapaio’s philosophy – that of constant monitoring and attention to detail, the distilling of the pomace could not be entrusted to anyone else.

However, in August 2016 Massimo had a chance meeting with Priscilla Occhipinti, owner of the renowned Nannoni distillery. There was an exchange of ideas, and Massimo soon realised that he and Priscilla had something in common – that very same care and devotion to their respective products – to which Priscilla’s expertise and experience regarding distilled products, still new to Sapaio, could be added.

And so began this new adventure in the world of grappa.

First of all a single grape, the carmenere variety, was selected. Priscilla was provided with the best non-pressed and well-soaked pomace, and production began in the distillery using an artisanal steam system. The pomace was distilled on its own, and above all, on the same day as the devatting – key to achieving a quality product.

The 632 half-litre bottles that were produced will be on sale as of April 2017. A small selection that will be included amongst the other excellent Sapaio products. We eagerly await tasting!
